Already a cult favourite off the back of their first few sought-after batches, Daftmill’s secret is in their scarcity (they only fill about a hundred casks a year). Of course, cult status only comes if the whisky is also fantastic, which this is. The liquid coming off the stills is incredible: super fruity and textured. There are a few reasons the whisky world is chasing every release from this tiny distillery. First is the full farm-to-bottle ethos: all the barley is grown on the estate and only 100 casks are filled each year. Releases are seasonal, because distillation only happens in the winter and summer – the rest of the time, the farm’s actually working as a farm. To give an idea of the rarity of each release, this 2012 Summer Release has only 5250 bottles.
