GlenAllachie’s Hall of Fame Master Distiller Billy Walker has artfully combined the familiar and the unusual when he was putting it together, marrying GlenAllachie’s renowned Oloroso Sherry influence with stocks matured in rare new Scottish oak.Scottish oak is – much like its Japanese cousin, Mizunara – notoriously difficult to work with, with a tradeoff of massive flavour on the table if you can wrangle it: chocolate, rich cola, vanilla and coffee await the skilled and patient whiskymaker who can get it to behave.Luckily, Billy is all of the above and more, and he’s put together an absolute gem here. The Oloroso casks and Scottish oak come together in an explosion of mocha, honeycomb and fruit – cranberry, citrus, tropical – with hints of cinnamon butter and gingersnaps.
