For most of the whisky industry Bourbon matured whisky is pretty much the norm. For Starward they went against the grain when they made the decision to use ex-wine barrels to mature their whisky. In what Starward describe as 'what we could have been' they have decided to mature whisky in ex-Bourbon barrels for this limited edition #2 which was available by ballot only.
The distillers fresh-filled bourbon casks with their tropical and fruit-forward new make spirit, and after five ‘Melbourne years’ (which is a nod to the city’s somewhat chaotic weather), this delicate single malt whisky is ready to sip. Bourbon barrels are the perfect neutral canvas for Starward's signature new make spirit and in the words of their blenders, ‘there’s nothing to hide behind with bourbon barrels’.  All of the tropical fruit esters captured in our fermentation process are prevalent in each delicious sip. On the nose, you’ll pick up aromatic grilled pineapple and vanilla.
