Australian whisky owes so much to the determination and passion of Bill and Lynn Lark. After much lobbying to have distillation laws changed, they opened their Lark distillery in 1992. Slow but steadily other notable distilleries began to follow suite and begin modern-day Australian Whisky. Then in 2014, Sullivans Cove took out the World's Best Whisky Award for their French Oak Cask HH0525 and catapulted Australian Whisky onto the world stage.
